Organic Red Kidney Beans are the classic base for chilli con carne (or its vegan equivalent), and just as useful in bean salads, stews and rice dishes where a firm, meaty bean is needed. Important: dried kidney beans must be soaked for at least eight hours, then boiled vigorously for at least 10 minutes before reducing to a simmer until tender — this destroys natural toxins present in raw and under-cooked kidney beans, so don't be tempted to slow-cook them from raw without this step. Certified organic, vegan and gluten-free, with no added sugar, they're a straightforward source of plant protein and fibre once properly cooked. Leftovers keep well in the fridge for a few days and freeze easily. Store the dried beans in an airtight container in a cool, dry place.
